They're just words (well, except for jebus and subej!) that have evolved over the years into the English language. Every word can be spelled backward... doesn't mean it has a secret meaning.

Well, any counterspell can be used to counter a counterspell or any other spell.
Spellbreaker Behemoth is a 4 mana 5/5 creature that cannot be countered and prevents all other creature spells with power 5 or greater from being countered.

Perhaps the two most reliable ones would be City of Solitude and Dosan, the Falling Leaf. Both have the same ability (plays can only play spells on their own turns), which not only prevents counterspells, but things like combat tricks as well. Some similar ones are Teferi, Mage of Zhalfir (opponent can only play spells at sorcery speed) and Defense Grid (spells played on other player's turns cost 3 more). Other than that, just go for straight-up uncounterable spells.

Any spell that has Split Second as an ability cannot be countered because you cannot respond to it. That spell has to leave the stack before other spells go off. There are other spells that just cannot be countered, Banefire is an example, if you pay enough mana for it. Volcanic Fallout cannot be countered. Terrastomper cannot be countered. Vexing Shusher can make sure Red and Green spells cannot be countered, but remember, the ability of the shusher can be responded to, so it may have to be activated twice, the second time in response to their response of your making the spell uncounterable (confusing, I know).

Boseiju, Who Shelters all is a land that can provide mana, albeit at a cost of life points, so it's not always dead. It's benefit is that the effect itself is not counterable (with the exception of Stifle.)
City of Solitude stops players from casting spells during other players' turns. This effectively prevents your spells from being countered on your turn. It also prevents your opponent from being able to cast instants and use abilities on your turn (though it hits you, too.)
